Honey is actually sweeter than normal sugar because of its high fructose content, so you can use less of it to attain the same sweetness. But did you know that the conventional honey in the bear-shaped bottle and the cloudy-looking raw honey in jars in health food stores are two different things? Raw honey, it turns out, differs significantly from processed honey. Before being bottled, raw honey is extracted directly from the honeycomb and filtered to remove dirt, wax, and other impurities. Organic raw honey online, unlike conventional honey, does not undergo pasteurisation or filtration, giving it its distinctive murky appearance. The filtration process that gives normal honey its clear, consumer-friendly appearance and runny, drizzle-able texture also removes much of the honey’s valuable components, such as pollen, antioxidants, and enzymes.
You may notice that a jar of raw honey in your pantry begins to solidify and crystallise after some time. Honey has no expiration date, and crystallisation is a perfectly typical response that doesn’t make the raw product any less nutritious.
